Cuban Meatloaf

Okie I thought I would share this little recipe with you all. I had to tweak my meatloaf recipe as my husband hated it, the magic ingredient that made him fall in love with it: olives. Don't be scared until you have tried. I didn't think it would work either, but I made it and now I'm believer. I make this about once a month and it is always such a comforting, delicious meal. Let me know if you do try it and how it worked out for you!

1-1.5 pound of ground turkey (feel free to use either ground beef or pork or even chicken)
One to two handfuls of chopped green olives (I drain them thoroughly, chopped them up into fine pieces)
One to two handfuls of chopped onion
15 to 20 whole wheat Ritz crackers
2-3 gloves garlic chopped fine
One egg (feel free to use egg beaters if you like)

Preheat oven to around 325 degrees

Mix all ingredients into a bowl, make sure that everything is really mixed together
Place in a greased baking dish
Bake in oven around 45 minutes to an hour
